Macallan 18 Year Old has received high praise from the authoritative Whisky Magazine. The internationally respected malt whisky critic Michael Jackson also regarded Macallan single malt as a benchmark for malt whisky. Its sherry oak casks are made under the full supervision of a ‘Wood Master’ with over forty years of experience. From the native oak forests of northern Spain to the warehouses in southern Spain where sherry casks are seasoned, the cask-making process takes six years in all.
Macallan 18 Year Old Classic Sherry Oak is one of the distillery's most highly praised whiskies among connoisseurs. In whisky, ‘double cask’ often refers to a combination of sherry and bourbon casks. It may mean blending spirit from two cask types or maturing the whisky successively in two types of cask. Macallan Double Cask, however, uses two kinds of sherry cask: Spanish sherry oak and American sherry oak.
Macallan 18 Year Old Double Cask is more complex and mature, balancing raisin aromas perfectly with warm oak spice. Oak influences the core qualities of Macallan whisky, including its colour and distinctive aromas and flavours.
Its specialist coopers select the finest 14% of the oak for use, then leave it to air-dry naturally for four years, reducing its moisture content until it becomes suitable cask wood. The individual staves are then assembled into casks, which travel thousands of miles to Spain to be filled with sherry.
Colour: amber honey.
Nose: dried fruit, ginger and toffee, rich orange, with clove and nutmeg.
Palate: abundant raisins, caramel, vanilla and ginger, with wood spice and citrus.
Finish: warm oak spice and ginger, turning to sweet orange.
Spanish Oloroso sherry casks: impart a natural deep amber colour, rich layers of flavour, ripe fruit, spice, chocolate and citrus.
American Oloroso sherry casks: impart a deep golden colour, with gentle citrus, lemon, coconut and toffee.
Premium American white oak casks: impart a bright golden colour. These fine bourbon casks bring floral aromas, sweet vanilla and fresh fruit.
Colour and aroma: full gold, with a little grain at first, richer aromas in the middle and burning wood.
Palate: weighty and buttery, with a gentle body and notes of caramelised banana and raisins towards the end.
