The journey of MACALLAN's winemaking begins in the far north of Spain. Under the intense sun of Cadiz province, oak barrels are engulfed in flames, transforming the wood into the essential wood for the maturation of MACALLAN's finest wines.
In the vineyards of Jerez province in Spain, farmers are harvesting grapes and filling brand-new oak barrels with the enzyme-rich grape juice. Just a few months later, the precious aged sherry will be transferred to oak barrels and aged for three years before it truly becomes a MACALLAN sherry oak barrel.
MACALLAN uses the ancient and precious Golden Promise barley, whose high cultivation cost deters other distillers. However, MACALLAN firmly believes that only it can make the whisky taste mellow and have a rich aroma.

Meanwhile, fresh yeast is incorporated into each fermentation process to add complexity and character to the whisky. MACALLAN also extracts only a small portion of the distillate during the distillation process; this is the "heart" that gives the single malt whisky its rich, full-bodied aroma.
Afterward, MACALLAN's experienced distillers carefully observe each "sleeping" oak cask, preparing to choose the right moment to "awaken" each cask when it reaches its peak maturity before bottling it.
