Whisky has a long history, and whisky made in different places has different flavours. When it comes to whisky, The Macallan deserves an introduction!

The Macallan is known as the Rolls-Royce of whisky. Besides being a staple for whisky enthusiasts, some Macallan releases are also bottles collectors pursue at auction. In 2019, a bottle of ‘1926 Macallan 60 Years’ sold for £1.45 million (HK$14.6 million), setting a Macallan record and becoming the most expensive whisky ever sold at that time.

During the pandemic, Macallan whiskies such as the 12 Year Old and 18 Year Old rose rather than fell in the spirits market.
Returning to our title: why is Macallan whisky so popular and sought after by thousands of people? The Macallan has long been known for its high quality, which comes down to its dedication to cask making and whisky production. The distillery places great importance on sherry-seasoned oak casks and also uses different cask types across its ranges. Besides the malt itself, oak casks are an important influence on whisky's aroma: whisky matures for at least three years, and over those years the oak gives it many flavours. Oak casks include bourbon casks and sherry casks. Bourbon-cask whisky can have vanilla, floral, lemon and citrus, nut and coconut flavours, while Macallan's sherry-cask whisky can have chocolate, nut, caramel and honey flavours, with a richer aroma. Sherry casks are produced in much smaller quantities than bourbon casks and cost more. The Macallan's commitment to cask making and maturation is particularly evident in its selection of sherry-seasoned oak. However, cask use differs between ranges: Fine Oak, later renamed Triple Cask Matured, combines European and American sherry-seasoned oak casks with American bourbon casks. The number of cask uses and subsequent transfers or marrying arrangements should be judged from the individual whisky's information. It is inaccurate to state categorically that casks are used only twice, never changed, or never used if they have previously held other liquids.

The Macallan distillery's strict production methods and commitment to sherry casks give its whisky high quality and allow it to keep producing some of the finest whisky.
Some people believe darker whisky means better quality, so certain distilleries add caramel to darken it. The Macallan, however, insists on using no caramel colouring. Its colour remains natural, with no added colouring ingredients; all of the colour in its whisky comes from the cask itself.
Macallan uses small copper stills to increase contact between alcohol vapour and copper. Their short design reduces the vapour’s travel distance and the return of heavier compounds, helping produce Macallan’s rich, full new-make style.
