The Macallan 18 Year Old has not only been highly praised by the authoritative Whisky Magazine, but also regarded as a benchmark among malt whiskies by Michael Jackson, the globally acclaimed malt whisky connoisseur. It is matured in sherry oak casks, supervised by a WOOS MASTER with over forty years of experience. The cask-making process, from the ancient oak forests in northern Spain to the sherry-seasoned bodegas in southern Spain, takes a total of 6 years.
The Macallan 18 Year Old Classic Sherry Cask is one of the most highly praised creations by connoisseurs since the distillery's establishment. You can find it in almost all high-end bars, renowned restaurants, clubs, and private gatherings worldwide. It is primarily matured in carefully selected Jerez sherry oak casks, boasting the rich and full character of the Highland region and the sweet notes unique to Speyside distilleries.
Color: Light mahogany
Nose: Dried fruit and fresh ginger, with subtle hints of citrus, vanilla, and cinnamon.
Palate: Rich dried fruit, with spices, cloves, orange, and toasted wood.

In the Whisky Era, "Double Cask" usually refers to whiskies blended from sherry and bourbon casks. One method is to blend whiskies matured separately in two types of casks, while the other involves maturing the whisky in two different cask types consecutively. Macallan's Double Cask, however, uses double sherry casks—Spanish sherry oak casks and American sherry oak casks.
The Macallan 18 Year Old Double Cask is even more complex and mature, with a perfect balance of raisin aromas and warm oak spices. Oak influences the core qualities of Macallan whisky, including its color and unique aroma and flavor.
Their professional coopers select only the finest 14% of oak, which is then air-dried naturally for four years to reduce moisture content, making it suitable for cask production. Finally, the individual staves are assembled into casks, which are then shipped thousands of miles to Spain to be filled with sherry.
Color: Amber honey
Nose: Dried fruits, ginger, and toffee, with rich orange, and notes of clove and nutmeg
Palate: Rich raisins, with aromas of caramel, vanilla, and ginger, and hints of wood spice and citrus
Finish: Warm oak spice with ginger, evolving into sweet orange

Spanish Oloroso Sherry Casks: Impart a natural deep amber hue, offering rich complexity, mature fruit, spice, chocolate, and citrus notes.
American Oloroso Sherry Casks: Give the spirit a deep golden barley color, these sherry casks provide gentle citrus, lemon, coconut, and toffee aromas.
American Premium White Oak Casks: Impart a bright golden color, these high-quality bourbon casks bring floral notes, sweet vanilla, and fresh fruit aromas.
