In the whisky world, "double cask" usually refers to a blend of sherry and bourbon casks. One interpretation is that the spirit is a blend of the two types of casks, while the other is that the spirit is matured separately in two different types of casks. The Macallan Double Cask, however, uses two sherry casks: Spanish sherry oak and American sherry oak.
The Macallan 18 Year Old Double Cask, on the other hand, is more complex and mature, with a perfect balance of raisin aromas and warm oak spice. Oak influences the core qualities of Macallan whisky, including the color it imparts and its unique aroma and flavor.
Their expert coopers select only the finest 14% of oak logs and allow them to air-dry naturally for four years to reduce moisture content, making them the perfect wood for oak barrels. Finally, the logs are assembled into oak barrels, which are then shipped thousands of miles to Spain to be filled with sherry.
